Ingredients
1 Onion
250g Mushrooms
380g Cooked Brown Lentils (Drained)
150g Sundried Tomtatoes
380g Crushed Tomatoes
100g Walnuts
6 Tbsp Olive Oil
1stp Dried Oregano
1 Tbsp Brown Sugar
500g Dry Spaghetti
Salt and Pepper
Method
Start by finely chopping your onion, mushrooms, sun-dried tomatoes and walnuts.
Fry the onion in the olive oil in a large saucepan on medium heat until it begins to become translucent. Then add your chopped mushrooms and continue frying.
Once the mushrooms are cooked and most of their water has evaporated, add in the sun-dried tomatoes and walnuts, along with the dried oregano.
Let this all fry together for 1 minutes. Then turn the heat to low, stir in the cooked brown lentils, crushed tomatoes and sugar. Cover this and lentil it all simmer for another 5 minutes on low heat. Season with salt and pepper to your tasts. Your bologneise sauce is ready!
When you are ready to eat, boil a large pot of salted to boil and add your pasta. Cook until al dente, drain, and enjoy with the sauce!
